Some may or may not know I oversee a baking competition inspired by The Great British Bake off. Located in Tooting called The Big London Bake, each month we have a recipe that we give to customers to compete against eachother at the end of 120 minutes. The judge ( myself) has to try whatever that month may be and say who’s won and why.
As we change recipes every month this means I have a lot of food development to do. One of the recipes I’ve been testing is a Boston cream pie.
A delicious sponge cake filled with custard and topped with a dark chocolate ganache.

We have multiple classes a day which means that I sometimes I have to finish off recipes whilst advising customers.
This is the first time I’ve tried this recipe or Boston cream pie at all, therefore I don’t know if it’s an original recipe? It’s exceedingly soft, due to the whisked sponge and custard middle.
